I have an induction cooktop which I love/hate, mine is a kitchenaid I am in the US. I love it cause it cooks very quickly but I hate it as if you have any moisture its beeps incessantly until you wipe off the water, sauce or whatever offensive liquid it detects. Ours did have an issue to fix an issue with the fan which took two trips from a serviceman to fix every time we used the oven it made a God awful racket of metal on metal but we did the renovation last spring during Covid when appliances were and still are scarce. David, regarding the renovation, we were the same. We looked for a well-kept apartment thinking we only wanted to do a mild refresh. We ended up gutting the place. Turns out we figured we might as well configure it exactly how we wanted it and ensure we wouldn’t need to do a major (highly inconvenient) renovation down the line when we were already living here. No regrets!

Are you able to bring your farm sink from your current place since apartments are usually sold without kitchens? Hope your shoulder is better soon!

We've had trouble finding the right faucet for the sink ever since the one I originally bought, broke. Plus someone staying in my place chipped the sink so we are getting a new one that's similar (but unfortunately a bit smaller) but has a hole drilled into it for a faucet so it's a LOT easier to find faucets that'll work with it.

I bought a bunch of aillet at the Marché des Lices this morning! One of the bio stands had bunches of 3 for 2.80€, so in the same price range as your bunch of 5. As an aside, Bordier now makes an "Ail des Ours et Poivre de Kampot" butter.

So glad you are on the mend! Amazing how a slight home refresh turns into a major remodel. I have a thermador dishwasher which is made by Bosch. Have no idea if thermador is sold i. Europe but it is really wonderful!

I sauteed it a bit in melted butter and tossed it with pasta and a little salt. Didn't want to mess with it too much - I kept it simple!

Hello David, the first time we used an induction stove was one our first visit to Paris. Besides falling in love with Paris, we also fell for that induction oven. We have one now in our apartment, and we love it. Doesn't heat up the apartment like a gas stove. And it's great for old people since it's hard to burn yourself. Good luck with your remodeling!

Someone did a side-by-side photo of how much gas (energy) is wasted on a gas stove vs. induction. I'm sure there are some downsides to using electricity over gas but we don't have a choice, so I'm riding the (new) wave toward induction.

Hi David,

I’ve been reading your blog and now your newsletter for a long long time.

Your last newsletter about choosing your new appliances prompted me to comment.

We are big fans of Miele appliances in our home. Most of them have been excellent. All our appliances are Miele except for the refrigerator-freezer (Sub-Zero). We even have Miele vacuum cleaners!

However, if you buy Miele we can offer some advice. The black sheep of our Miele family has been the induction cooktop. The first time we purchased it, it failed but it was under the 5 year warranty. Miele replaced it free of charge but the second time it failed it was out of warranty. On both occasions it was an induction element that failed and they are very expensive. Consequently when we purchased the new induction cooktop we negotiated a good price for the cooktop and decided to go for the 10 year warranty. Even though this warranty was still quite expensive, it was a fraction of the cost of a new element and we recommend it as “insurance” and for peace of mind.

Incidentally, we really like cooking with induction. It is fast, incredibly responsive and with the right cookware a pleasure to use.

Hope your shoulder is better soon. Envy you moving into your new apartment.

Their website seems to be having issues but if links don't work or are broken you can usually Google the topic or terms (or name of chocolate company) and find them that way.

To that you are asking for advice but…I vote for Miele! I have had my dishwasher for more that 15 years and it has never been repaired. I have 2 of them, the built in coffee maker and the combo convection/microwave (now replaced by a combo steam oven no microwave) and those are 14 years old. No repairs. Worth every penny.

Not sure if it is possible in Paris, but I had it in my mind, while remodeling my kitchen, to purchase restaurant equipment. While it was possible to do, I would loose the manufacturer’s warranty if any thing broke. I wanted both range, 6 burners, and a refrigerator on wheels.

I purchased instead, a Blue Star, which I had purchased in the past, and I’m happy!

It's very hard to install restaurant equipment in homes for a variety of reasons but one if that people in France don't usually do that and contractors (and others) are very surprised, and not necessarily willing, to install restaurant things in apartments since it requires a lot more manipulation and work. When I did my current kitchen NO ONE understood that I wanted a large kitchen island to cook and eat one. I had to convince everyone that yes, I really did want one.

David, my Miele dishwasher broke after 4 yrs., 5 months and is needing repair. My Miele oven is very technological and I find I never use 90% of what it offers. I’m with you - I just want a knob and heat. I do like double ovens. I’m not sure I’d recommend Miele.

Your new apartment looks divine. I so enjoy reading your renovation stories.
