Congratulations on your new home! Hopefully you have better luck with your renovations this time around. I've had a Bosch dishwasher for almost 10 years and love it. Waiting for my 22 year old gas Thermador to die so that I can switch to induction! Good luck with everything.

Congratulations to you and Romain!!! I sincerely hope this renovation is easier than the last even though I know we would all love another book from you. Dishwashers….those I’ve loved most have food grinders in them so you don’t end up with clogged filters and or dirty dishes. My Bosch was very quiet. Can’t wait to see the kitchen come to life! Cheers to you both.

A lot of people (and companies) talk about how quiet dishwashers are. I think I'm the only one that likes that sound of all that water swirling around...cleaning!

Congratulations on the new adventure David! my two cents is that induction cooktop quality varies hugely. I essentially cant even boil water on my current stove in our rental apartment as it is so temperamental. Sometimes it will be raging hot, sometimes it will be barely warm and no matter where the dial says it is there will be nothing in between! Sometimes it won't even turn off! It's so bad we got a high quality portable plug in induction burner we sit on top of the stove and I use that for everything. My advice is find someone with the model you want if possible and talk to them about it.

I am a paid subscriber who is very confused. I get your "newsletter" as an email and at the bottom it says "this newsletter is for everyone". Is this the paid version? Do you have a blog, free newsletter, and a paid newsletter? I like simple. If I pay for the upgrade then that's what I want in my email. I don't want to have to go somewhere else and sign in with a password. Thanks in advance for clearing up my confusion!

I have a blog but I don't post much on it anymore.

For the Substack newsletter (this one, that you're reading), there are two options; Paid and Free.

Free subscribers get some posts, and paid subscribers get all the posts (in addition to the free ones). Paid subscribers well as the ability to comment and full access to the archived recipes and stories. All newsletters get sent out via email and you should only have to sign in once, although sometimes browsers (like Chrome, Safari, etc) log users out when they update or for security reasons.

I've had both Bosch and Miele dishwashers and hands down Miele is better. Also the Miele washer/dryer. If Gaggenau is an option for you go for it, its worth the investment. My kitchen is the heartbeat of our life so it was worth the investment to have equipment that functions. BTW Bosch (BSH) also owns Gaggenau and Thermador. All excellent products.

David we moved in to our apt in Sydney (Aus) 8 years ago and had to replace all the white goods in the first 2 years. Having renovated 6 homes between us, we both agreed on the Miele products. Love them all. Induction cooktop and steam oven. Amazing dishwasher (super quiet) and washing machine and dryer. Hope this renovation is less stressful than the last.

I so enjoy your newsletter, I relate to so much of what you say about living in France. I spent 5 years on the Cote d'Azur in the late 80s and have been fortunate to also spend several months each year in Paris. We rent a little apt in the 6th but only for the months needed, its wonderful to have our own place without ownership (and responsibility)! It was newly renovated when we first took it with a Bulthaup kitchen, and an induction stovetop. My first experience. At home in SoCal we had a Boffi kitchen with Miele appliances. We've now moved into a new home we built, and learned from all our past experiences. Boffi and Bulthaup both have beautiful kitchens. Our newest one is Leicht, also excellent. I had a Boffi stainless countertop and loved it. Indestructible, accepts high heat, and always beautiful. Only the first year is tough when you get your first scratches! A Miele dishwasher is the best on the market, much better than Bosch but it is the only Miele appliance to purchase. Gaggenau has the best ovens, stovetops, coffee makers, etc. I quickly learned the difference between an affordable induction stove and an expensive one. Make sure you can try out whichever you decide on. My Paris one shuts off it any water drops on it (sorry I don't remember the brand). If you have water boiling and it spits, cheaper ones will shut off. If you can afford it, buy a Gaggenau! They make a fabulous induction, the best on the market. And I'm madly in love with my Gaggenau steam oven. Your new apt looks amazing, congratulations. What district is this, with a garden??

A friend who is a food stylist told me the same thing about Miele appliances. He said just the dishwasher (and washing machine) but not the other appliances. Wirecutter (NYT) did a big story about why Bosch dishwashers are better, although they said the Miele ones lasted longer, so leaning toward the Bosch, although I have a Bosch dryer and after about 8 years the electronic card went on the fritz, which was almost €400 to replace which was very expensive, considering I think I spent €450 on the dryer. I also didn't realize that Bosch dryers have two filters and had the repair fellow come a few years ago because it wasn't drying. I didn't know about the second filter!

The Gaggenau stovetops are very expensive although I hear they are good. They are opening a showroom in Paris but it's hard to try stovetops unless the store has a showroom in Paris, as Miele and Gaggengau do (but not Bosch or Siemens)

I love my induction stove! We did a house exchange and I lived with one for a month. First chance I had I switched from gas to induction. Really responsive. And FAST as there is much less wasted energy. It boils water so quickly. The biggest change I had was not spending as much time away from the stove while waiting for things to heat. Burned a few things that way. Best thing though, the kitchen doesn't get nearly as hot cooking in the summer as with gas.
