Thank you, Rosa, for writing an updated cookbook for Nice! I have Jacques Médecin’s book which is very good, but a bit dated. And David, I enjoyed the podcast. You are so natural in this form of media.

The Médecin book is very interesting, but it sort of dated. It's nice to get a refreshed look at Niçoise cooking and Rosa is the one to do it.

Anchovies ,large dice boiled potatoes,hard boiled eggs sometimes lettuce and or green beans ,vinaigrette (mostly no anchovies or on side)sold thousands of them that way

There is a very good and very inexpensive milk frother at IKEA - it's like $3 and looks flimsy but it works and lasts.

I don't like frothy milk but Romain does. I got him one of those mini frothers and for some reason he didn't use it (I also got him one of those French-press style frothers from Bodum which works well, but he didn't like it either.) Lovely column. Interesting that the gorgeous photograph of Rosa Jackson was taken by the polymath South African chef, Jan Hendrik van der Westhuizen of Michelin starred JAN in Nice.
