Be sure to check out RIZE UP Sourdough Bakery in your old stomping grounds of San Francisco, another wonderful success story with lots of similarities. BTW, currently in snowy Breckenridge, CO, but happy they have plowed a path to the amazing French Bistro Bakery!!

I’ve been a reader of your newsletter for a long time and I love hearing a podcast!! I’m

also really enjoying the Substack platform. I rarely post comments online (for fear of all the nasty comments that live online) but Substack feels like a smaller forum to comment on.

Brian is such an inspiring guest - my husband is a home baker and I can’t wait to purchase Brian’s new book for him when it comes out. I know my taste buds will benefit :) Personally, I think his question about the dominance of French baking is so intriguing and exciting. We’ve lived in the Mission District of San Francisco for almost 10 years and when we first moved here I didn’t know much about the Mexican bakeries in the area. It’s been fun to discover them through the years but I still feel like there’s SO much more to learn...

Finally, I wanted to tell you how much I appreciate your point of view of France and Paris. I’ve been a Francophile my whole life. I received a French degree and lived in Paris for a year with a lovely family who I still visit regularly. What I appreciate about your perspective is it breaks down the boring narrative that all French people are impeccably dressed, all French food is delicious, and Paris is always a romantic journey. What has kept me going back to France (other than friends) is the tension. It’s the many complexities the country offers, the diversity of the people, the struggle to preserve the old while navigating an ever changing world. I love that you introduce these concepts to people through food and culture - thank you!

That was a great conversation! We are finishing up our 3.5 week in France and we made it to The French Bastards today. Looking forward to trying their multigrain baguette (and the 2 eclairs also purchased). Thank you for sharing information about all the great food purveyors in Paris.
