I just tried the recipe. The marshmallows taste good but I messed up the consistency. When I drizzled the syrup, the mixture deflated and never regained its "fluff". I have never used agar powder, nor guar gum before today so I am not sure how to correct my error(s). Any extra tips from readers or @davidlebovitz will be welcomed. Thanks

Once you go vegan donuts, you won't go back. Very popular here in my area of US. I was surprised to see how popular 5 Guys was in Paris. Each one I passed by was busting out at the door.

I think we've peak "hamburger" in Paris as places, locals and chains, are everywhere. I can't believe there's room for more but people love 5 Guys - because it's très American : )

Someone I know had a minor car accident and he blamed the radio in the car...because he had to reach for the knob to change the station and it was too far away (!)

That’s generally the argument for driverless cars; that most accidents are the result of human error. (Distractions, etc)

The only recipe I use for marshmallows is from Americas Test Kitchen video on YouTube. It has no egg whites. I make them when I make your chocolate marshmallow fudge recipe.

I have made meringue using chickpea aquafaba with very good results. I also tried making it with the liquid from other canned beans…red kidney, black beans. All worked but the chickpea liquid was the best. Thanks for the tip about canned vs homemade aquafaba. I’ve not made marshmallows before but am intrigued to give this a try. Thanks, David!

I was surprised about using "fresh" liquid from chickpeas I cooked myself. Many recipes I've seen don't talk about that. It was also fun learning about agar-agar and I was surprised to find it so easily. Gelatin is usually the default.
