Interesting interview! I took a *great* market cooking class w/La Cuisine in 2018. I will admit that I was slightly disappointed at first -- Marché Maubert is not the biggest or most picturesque, and our guide/chef was a fellow American. I couldn't have been more wrong -- as we visited each vendor, it was an education in French culture and seasonal eating. Our chef -- who put together the menu as we shopped -- had lived in France a long time, had a French spouse, and was a great teacher. I'd recommend a La Cuisine class to anyone visiting Paris.

They do a very good job "curating" their chef instructors. It's true that market isn't the biggest but it's easy to navigate with guests & the people who sell things at the markets have a good relationship with the chef/instructors, which enhances the experience quite a bit :)

Yes, absolutely my experience. Now I want to go pull my recipes for caramel soy sauce (for duck or pork) and almond/pear tart.
