Thank you for such an interesting interview. I attended classes at La Cuisine in 2015 and 2016. They are still some of my fondest experiences and memories of Paris. The sauce and wine & cheese pairing classes were especially fun. It’s also taken me nearly 6 years now to make macarons almost perfectly. I say almost because they still come out hollow sometimes. I look forward to traveling to Paris again so that I can take another cooking class.
What a superb interview, David! You have a generosity of spirit that permeates your writing. I've taken a few classes at La Cuisine and very much feel a part of the community Jane speaks of. It was the first cooking school in Paris that I wanted to return to. I don't know if I ever saw Jane there but I feel I have gotten to know her since the world ground to a halt a year ago. She has pivoted repeatedly and the result has made her more visible and IMO strengthened that sense of community she strives for. Like you, she has fed our Paris hunger on Instagram by showing markets, POV and especially Lives. You're both treasures.

It's always interesting to learn about cultural differences between the French and the Americans, and the Ex-Pats in Paris too. I plan on visiting Paris when the lockdown is over and would love to book a class at La Cusine. As always, Merci David!!

Interesting interview! I took a *great* market cooking class w/La Cuisine in 2018. I will admit that I was slightly disappointed at first -- Marché Maubert is not the biggest or most picturesque, and our guide/chef was a fellow American. I couldn't have been more wrong -- as we visited each vendor, it was an education in French culture and seasonal eating. Our chef -- who put together the menu as we shopped -- had lived in France a long time, had a French spouse, and was a great teacher. I'd recommend a La Cuisine class to anyone visiting Paris.
They do a very good job "curating" their chef instructors. It's true that market isn't the biggest but it's easy to navigate with guests & the people who sell things at the markets have a good relationship with the chef/instructors, which enhances the experience quite a bit :)
My first experience with Jane was her excellent Customerservice with a warm attitude. I took several classes and was very happy and content but it took me awhile to actually do it with success. Very nice atmosphere with all the instructions.
Yes, they do a very good job. When I led tours we did a cooking class with Chef Eric there who was terrific and it was always a lot of fun - and delicious, too!
